Ingredients-
Boiled Wild rice - 1/4 cup
Soaked and peeled almond – 2 tbsp.
Sunflower kernel – 1 tbsp.
Pumpkin seed – 1 tbsp.
Pistachios-1 tbsp
Sprouts- 1tbsp
Golden raisins, fresh assorted berries- 1/2 cup
Orange zest - ½ tsp
Dressing: -
Olive oil – 1 tbsp.
Raspberry vinegar/ balsamic vinegar – 2 tbsp.
Orange juice - 2 tbsp.
Black Pepper- 2 tsp
Salt - as per taste
Parsley leaf/ Mint (chopped) - 2 tbsp.
Method of preparation-
1. In a large saucepan, bring water to a boil. Add wild rice. Reduce heat; cover and simmer for 30-50
minutes or until tender.
2. Cool rice to room temperature. In a large bowl, combine the almonds, pistachios, sunflower kernels, sprouts, pumpkin
seeds, dried fruit, parsley and orange zest; add rice.
3. In a small bowl, whisk the dressing ingredients. Pour over salad and toss to coat. Cover and refrigerate
for at least 30min.(optional)
